There’s a new place to drink gin in the Pearl District. Botanist, the bar from Urban Farmer alum Robbie Wilson, is a contemporary take on a martini bar in a cozy cavern of a space, serving creative, polished cocktails alongside seafood and drink-friendly bar bites.
At this sleek subterranean gin bar, veteran mixologist Robbie Wilson is spreading the joys of juniper berries to bargoers west of the Willamette. For those who know little of the details that distinguish one type of gin from another, the list of about a dozen $13 cocktails serves as a safe point of entry. As basic as it is, the Botanist G&T should be the go-to for anyone who's familiar with the timeless pleasure of a simple gin drink.
In Portland, Botanist Bar, Deadshot, La Moule, Normandie, Scotch Lodge and Stone Soup will be mixing up their own renditions. “Given our region’s long history of both wine production and craft distillation, cognac is right at home here,” adds Cognac Educator Adam Robinson of Deadshot.
